Quiche

Today's adventure in quiche: bacon, spinach and onion with smoked gouda and parmesan! What are your favorite quiche fillings? Not sure how to make this great, easy dish that lets you use whatever ingredients you have on hand? Here's what I do:Preheat oven to 350 degrees. Cook 4 pieces of bacon in a skillet, then chop and set aside. Drain any excess grease from the pan, using a little to grease a 9" pie dish. Add a diced onion to the skilllet and cook until soft and toasty, then add two big handfuls of spinach and cook until wilted. Add the veggies and bacon to the pie pan and cover with 1 cup of cheese. In a large bowl, beat 8 eggs with 1/2 cup of heavy cream, 1/2 tsp salt and 1/2 Tbsp herbs de provence. Pour the egg mixture over the meat and veggies and top with 1/2 cup more cheese. Bake on middle oven rack for 35 minutes or until the top is firm and toasty. Take out of the oven and let sit for 5 minutes, then cut and enjoy!
