Bone Broth 🦴

Broth made from bones is one of the most healing things you can eat (or drink). I aim to drink a cup every day. Commercial broth doesn't always have the healthy ingredient profile you want, but thankfully, it's incredibly easy to make from scratch.
I eat a lot of chicken wings - a pound on most days. So I save the bones, cartillage, etc. in a gallon-size bag in the freezer, and when it's full I dump the lot in my Instant Pot, add salt and herbs de Provence (or whatever herbs you like - it's all optional) and cover the bones with water (the pot should be about 3/4 full).
Cook on high pressure for 2 hours, then on low pressure for another 2 hours, then let it depressurize naturally.
Strain the broth, adjust the seasonings if you'd like, and let it cool - then store it in the fridge. You'll notice that when it cools down it's all thick and jiggly - that means it's crazy healthy! Don't worry - it looks like normal sipping broth when it's warmed up. Makes great soups, too. Cook with it whenever you can to seriously level up the health value of any dish.
